We start with the welcome pour, the Cape Elephant Chenin Blanc, a delicious wine with a yellow color and golden tones,. The taste of the wine is floral, light-bodied, and refreshing, with bright citrus and tropical fruit flavors like lime, grapefruit, guava and pineapple. It pairs well with dishes that have a bit of sweetness and acidity, like Southeast Asian cuisine or pork chops with apples. Great accompaniment to seafood, fish and spicy foods. For an extra decadent pairing, try it with a roast turkey dinner – the richness of the turkey and the acidity of the wine create a delicious combination that’s hard to beat!

Moving on to the next wine, 9 Lives Riesling from Chile was a great choice. The wine has a high aromatic strength and freshness on the nose. Dry, acidic, ripe grapefruit notes, yellow plum notes, green apple notes, slightly flowery, herbal notes. It’s got a lot of citrusy and delicate floral flavors, so it’s perfect for pairing with lighter dishes that have a bit of acidity and flavor. Its fruity mouthfeel and exceptional freshness is best to try it with seafood dishes, or even some blinis (those little Russian pancakes). The Riesling’s perfect balance of acidity and sweetness will cut through the richness of the food and create a nice balance. It’s also great with crayfish – a classic Finnish dish that goes great with this wine. Overall, it’s a versatile wine that will work with a range of flavors, so go wild and experiment!

The interiors modern retro design and you are wowed by the wall rack, filled with wines and champagne from all over the world. Madfish Sauvignon Blanc Semillon, Australia, the initial swirl exposes lychee, honeydew melon, lime zest, star fruit, and cut grass notes. Passionfruit and quince greet the palate, delivering balance and length with juicy, sharp citrus and crisp acidity. This wine is alive with tropical and pome fruit aromas, making it the ideal summer aperitif. Mad Fish Sauvignon Blanc-Semillon from Australia is a fantastic wine that’s packed with bright, fruit flavors and a nice acidity that makes it very versatile when it comes to food pairing. It’s a great option for salads, light pasta dishes, and Mediterranean appetizers, since the acidity in the wine helps to cut through the flavors of the food and create a nice balance.

Mad Fish Sauvignon Blanc Semillon is a vibrant, youthful take on a traditional mix. This Australian interpretation of a Bordeaux classic has ample fruit flavours and a robust structure, making it a great wine to enjoy young.

South West Australia’s great environment has long been beneficial to the development of robust wine grapes with appealing and bright fruit flavours.

SSB wines feature more Semillon grapes in the mix, whilst SBS wines have more Sauvignon Blanc grapes. This results in a deeper, waxier texture in SSB blends, whereas SBS wines have brighter acidity and more noticeable citrus and herbal flavours. Another distinction is the taste character of both wines.

Hold a wine diagonally against a white surface to assess its colour depth and hue. An strong, rich colour may imply a high concentration of material and extract.

Wine colour, along with red, white, pink, yellow, and orange, is one of the most basic descriptions of wine. Wine colour may reveal a wine’s flavour, age, grape varietal, and other characteristics.

The colour of wine is mostly determined by the colour of the grape variety’s drupe, by the technique of vinification and the amount of time the must spends in contact with the skins, a process known as maceration.

Gato Negro Merlot from Chile is a medium-bodied red wine with smooth tannins and a long, fruity finish. It pairs beautifully with red meat dishes like lamb, pork, or duck, as well as pasta or pizza. Pasqua Montepulciano d’Abruzzo was a treat! This red wine is medium-bodied with intense flavors like dark fruit, spice, and a touch of earthiness.

Pasqua Montepulciano D’Abruzzo featured rich tannins, with great structure, and a vibrant, vivid hue. It tastes like rich red fruits with a dash of spice. It pairs well with red meat dishes, seasoned cheeses, and game. The high acidity and tannins of Montepulciano d’Abruzzo make it a perfect match for rich and savory foods. A full-bodied red with noticeable yet moderate tannins and an average amount of alcohol, with hints of ripe fruits like blackberries and morello cherries, as well as spicy aromas.

This wine comes from Pasqua vineyards in Central Italy, near the Adriatic Sea, between Chieti and Casalbordino in the Abruzzo area.

Another of my favourite, the MadFish Cabernet Merlot is a deep, rich wine with aromas of blackberry, blueberry, and herbal notes. It’s medium-bodied and has smooth tannins that make it a great wine to pair with food.

The bright, red fruited heart of this wine is complemented by savoury aromas of cedar spice, mint, dusty cocoa, mocha, and dried sage. The wine unfolds on the palate, showing notes of juicy cherry and red licorice, as well as chocolate and baking spices. The earthy tones and rich red fruit at the heart of this wine are supported by balanced acidity and mild, powdered tannin. Deliciously drinkable with a tantalising depth of taste.

The adaptability of this wine makes it an excellent choice for any meal, whether it’s a simple weekday supper or a formal dinner party. The wine’s tannins assist to cut through the richness of the dish, resulting in a well-balanced and pleasurable dining experience.

Some of the best pairings include:

•          Grilled vegetables like eggplant or zucchini

This wine is made from premium grapes grown in Western Australia’s temperate and cool grape growing zones. The classic Bordeaux grape varietals that make up the majority of this wine are all well adapted to the climatic conditions found in these locations.

Margaret River and Great Southern soils extend back 1.6 billion years, giving them among of the world’s oldest recorded geology in any viticultural location. MadFish vineyards’ soils are gravelly with a layer of clay beneath. The gravel soil drains well and maintains heat, promoting grape ripening.
